Coconut yogurt is a probiotic-rich food, which means it contains live and active bacteria which can improve your gut microbiome.

Process to Make Coconut Yoghurt
1. Scratch out the malai from the coconuts.
2. Measure 3 cups of fresh coconut malai and 1 cup of drinking water.
3. Now put the coconut malai and water into a blender and blend until it get smooth.
4. Place the coconut malai and water into a blender and blend until smooth.
5. Put 8 chili tops (the raw stick) on top of the mixture and cover with a plate. Keep the bowl in a mildly warm place like in balcony or you can consider the empty oven too.
6. Now allow it to ferment for eight hours before coconut yoghurt gets ready to use! While it is setting, make sure that the bowl is not disturbed.
Important Notes
This coconut yoghurt is not meant to be eaten on its own. This yoghurt should only be for making other dish.
Fermentation time will vary, depending on the weather, In the summer it will ferment faster (within 6-8 hours), whereas in the winter, it will ferment slower (within 8-10 hours).
